boiled eggs with asparagus tips

Hi, This is a nice alternative in the morning for breakfast do away with bread and butter soldiers, help to keep those blood sugar levels down. 

Ingredients
2 eggs.
1 small packet of asparagus tips.
Pepper and salt to taste.

Organic eggs.

Preparation
Add enough water, so that when eggs are placed into boiling water it will not quite cover the eggs. Help to stop shells cracking (so i am told) seems to work.


Place water in saucepan and bring to boil, first take large serving spoon and gentle lower eggs into boiling water, I usually boil mine for about 5 minutes, you adjust time to suite your own way you like your eggs done runny, when the time is about halfway through i drop into the boiling water the asparagus tips I like them so when dipped into eggs there not soft but still have a slight firmness Al-dente to crunch on them when covered with egg yolk .hmm , when finished remove all and add to plate and serve immediately . Add Pepper and salt to taste.

Accompaniment. Serve with fresh Organic  orange juice.
